Next time you need a comforting meal, make this!

Comfort food is a big bowl of saucy noodles...while in my pj’s...and while watching a documentary on Netflix. It’ll make you a happy couch potato. 💛 #vegan #recipe



|Mushroom Stroganoff


2 tbs olive oil

1 shallot sliced

1 1/2 lbs sliced mushrooms

3 tbs flour (or flour substitute)

2 cups vegetable broth

1 tbs tomato paste

2 tbs soy sauce

Salt & pepper

1 tsp Herbs de Provence

1/3 cup vegan sour cream (optional)

Noodles

Chives or parsley for garnish


“Add sour cream if using, it’s not necessary but makes the sauce more creamy.”

|Directions


Cook noodles according to package while making sauce. In medium pan, sauté onions in olive oil on medium-low heat until soft. Add flour and whisk to combine and blend. Once a smooth paste is formed, slowly whisk in broth. Bring the sauce to simmer and add tomato paste, soy sauce, salt & pepper, herbs de Provence and mushrooms. Turn heat to low, cover pan with lid and simmer sauce & mushrooms until they’ve shrunk in size and are cooked (about 5 minutes). Add sour cream if using, it’s not necessary but makes the sauce more creamy.

Spoon sauce over cooked noodles. Then garnish with chives/chopped parsley.
